AMMO Recipes: Rustic Apple Tarts

The chefs at AMMO are excited to share their favorite recipes with you so that you can make them at home (and of course still enjoy them when you visit the Hammer). This Rustic Apple Tart is AMMO's November dessert special, and the perfect dessert to add to your Thanksgiving spread.

THE RECIPE

Ingredients for Dough:

1 ½ Cups All Purpose Flour
6 oz Butter (1 ½ sticks)
1/3 Cup Ice Water
3 Tablespoons sugar

Egg Wash for Dough:

1 Egg
1 Tablespoon Water
Crystal Sugar

Ingredients for Filling:

5 Apples
2 Tablespoons Butter
2 Tablespoons Corn Starch
1 Teaspoon Cinnamon
½ Cup Sugar
½ Cup Brown Sugar

Peel 5 (golden or green) apples. Core them and cut into thin slices. Add 2 tablespoons of butter to a hot sauté pan, melt butter. Add apple slices and sauté until golden brown. Mix corn starch, cinnamon, brown sugar and white sugar in a separate mixing bowl. Slowly add to apples and cook until sugar has dissolved. Portion sliced apples to make 6 tarts.

Pulse flour, salt and sugar in food processor. Add butter and pulse for 5 seconds. Add water and pulse for another 5 seconds. Transfer dough to a highly floured work space. Knead twice until it forms a whole. Refrigerate for at least 30 minutes. While dough is resting, prepare apples.

Roll dough in a floured work surface. Roll out dough until it is about ¼ inch thick. Cut 5 inch circles. This dough should yield six tarts. Place prepared sliced apples into center of the dough- about 3” diameter. Fold the brim of the dough around the apples in the center. There should be about a 1 ½” gap in the center of  dough exposing apples. Brush the exposed dough with the egg wash and sprinkle crystal sugar on dough.

Bake at 350 degrees for 30 minutes.
